Great for fall dinners, or for a Thanksgiving twist, use turkey breasts.
4 boneless chicken breasts
8 strips of maple smoked bacon (preferably turkey)
1 apple, cored and sliced
1 pear, cored and sliced
5 to 7 mushrooms
ground clove
butter
3 T honey
3 T pure maple syrup
1 T soy or tamari sauce
2/3 cup apple cider
Coat the bottom of a glass baking dish with butter. Spread the apple and pear slices evenly on the bottom of the baking dish. Wrap the chicken breast with 2 strips of bacon each and place these on top of the sliced pears and apples. Add the sliced mushrooms and lightly sprinkle the chicken with the ground clove.
In a bowl, mix the cider, honey, soy, and maple syrup together and pour over the chicken. Bake at 375 degrees for 45 to 50 minutes until the chicken is tender. Serve over brown or wild rice.

This is a very yummy dish - great for entertaining.
